Since I’ve been posting alot of sweet recipes, I thought I should share a favorite low fat recipe. Soup always makes for a delicious meal – especially in the fall. We love this one and enjoy it often. It’s a quick meal for busy families.
REFRIED BEAN SOUP
1-15 oz. can black beans, drained
1 - 8 – oz. jar salsa
1 – 15 oz. can refried beans
1 – 15 oz. can chicken broth
1 -15 oz. can corn
1 - 8-oz. can chunk chicken
Mix ingredients in large saucepan in order given and heat through.
There are fewer than 10 grams of fat - and 49 grams of fiber – total – in this recipe!!
I like to saute diced celery and onions in oil, add the broth, simmer for about 10 minutes, then add the remaining ingredients. The veggies give the soup a nice crunch and adds some nutrition. I try to use low-sodium, or no-salt added ingredients.
This is wonderful with a grilled sandwich or quesadilla.
